Salada Japonesa de batata
Japanese style potato salad



Para uma segunda sem carne hei-de experimentar esta receita “salada japonesa de batata” tirada (daqui).  Quanto à maionese, apesar de no site utilizar-se maionese de tofu, creio que para facilitar poderá ser utilizada maionese normal, ou apenas um tempero a gosto. Eu como não sigo as receitas, à risca, aqui vai a minha versão “livre” da receita:

Salada Japonesa de batata

Ingredientes

Batatas médias (3 ou 4)
Uma cenoura média
Meio pepino
Azeite (colher de chá)
Mostarda (colher de chá)
Sal
Pimenta
Sumo de limão (colher de chá)

Descascar as batatas e a cenoura, cortar em pedaços.  Colocar a cozer, em água a ferver - até se encontrar tenras - o tempo de cozedura depende do corte, por isso é melhor ir verificando.  Após a cozedura retirar os ingredientes, escorrer e colocar, por exemplo, numa tigela. Acrescentar aos ingredientes, o sumo de limão, o azeite, a mostarda, o sal e a pimenta. Mexer e deixar arrefecer.  De seguida, juntar o pepino (já cortado em pedaços).  Acrescentar a maionese, mexer com um garfo, tapar e colocar no frigorifico para arrefecer.

Nota: na versão original um dos ingredientes é cebola (que eu não aprecio)contudo poderá ser colocada, a gosto, parte de uma cebola pequena (cortada).


Recipe for a meatless Monday, taken from this site (here). I must confess, I never tried this recipe before and to make it easier I will not make, or use the tofu mayonese (from the original recipe), instead I will use the regular organic mayo.

Japanese style potato salad 

Ingredients

3-4 medium to large boiling potatoes, totalling 1 lb/450g in weight after peeling
1 medium carrot, peeled
1/2 cucumber
About 1/6th of a small onion
1 Tbs. olive oil
1 tsp. Dijon-style mustard
Salt, pepper
1 Tbs. lemon juice

Peel and cut the carrot in half and slice thinly. Peel the potatoes and cut into small chunks.
Add both to a pot and cover with cold water, add a little salt, and bring to a boil. Boil until the potatoes and carrots are tender - the cooking time depends on how big you cut them up. Test for doneness by tasting a piece.
In the meantime, seed the cucumber and slice thinly. Slice the onion thinly also. Put both into a small bowl, and sprinkle with a little salt, and massage with your hands so that moisture comes out of the slices and they become quite limp. Squeeze out excess moisture.
Drain the potatoes and carrot well. While still hot, put into a bowl and add the lemon juice, olive oil, mustard and a little salt and pepper. Mix well, and leave until cooled down to room temperature. Mix in the cucumber and onion.
Cover and cool in the refrigerator.
