Segunda sem carne / Meatless Monday

Sanduíche de grão com caril

ingredientes

·         425 gramas de grão-bico, lavado e escorrido
·         2 colheres de sopa de pó de caril suave
·         2 colheres de sopa de água
·         1 colher de sopa de suco de limão
·         2 colheres de chá de mostarda amarela
·         ½ colher de chá de alho em pó
·         ½ colher de chá de cebola em pó
·         ¼ colher de chá de paprica
·         ¼ colher de chá de gengibre em pó
·         ¼ colher de chá de garam masala com pimenta Caiena
·         170 gramas de iogurte de soja, simples
·         ½ colher de chá de salsa seca
·         1 ¼ colher de chá de suco de limão
·         ⅛ colher de chá de sal
·         Pães pita

instruções
Misturar o grão de bico com as 2 colheres de sopa de caril, água, 1 colher de sopa de suco de limão, 2 colheres de chá de mostarda, 1/4 colher de chá de alho em pó, 1/4 colher de chá de cebola em pó, 1/4 colher de chá de colorau, 1/4 colher de chá de gengibre em pó e 1/4 colher de chá de garam masala com pimenta de Caiena e sal a gosto. Mexer para que o grão absorva as especiarias e transfira para uma frigideira anti-aderente. Cozinhe em lume médio até que o grão de bico aqueça e fique ligeiramente escurecido. Reservar. Para fazer o molho de iogurte, junte as 170 gramas de iogurte com a salsa, 1/4 colher de chá de cebola em pó, 1/4 colher de chá de alho em pó,  1 1/4 colher de chá de suco de limão e sal a gosto.  Mexer.  Aquecer o pão pita.  Colocar nos pães pita a mistura do grão de bico, com pepinos frescos, alface e o molho de iogurte.



Curried Chickpea Sandwich

Ingredients

·         15 ounces chickpeas, drained and rinsed
·         2 tbsp mild curry powder
·         2 tbsp water
·         1 tbsp lemon juice
·         2 tsp yellow mustard
·         ½ tsp garlic powder
·         ½ tsp onion powder
·         ¼ tsp paprika
·         ¼ tsp ground ginger
·         ¼ tsp garam masala with cayenne
·         6 ounces soy yogurt, plain
·         ½ tsp dried parsley
·         1¼ tsp lemon juice
·         ⅛ tsp salt
·         Pita bread

Instructions
Combine chickpeas with 2 tbsp curry, water, 1 tbsp lemon juice, 2 tsp mustard, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp paprika, 1/4 tsp ground ginger and 1/4 tsp garam masala with cayenne and salt to taste. Stir to make sure chickpeas are coated evenly and transfer to a non-stick skillet. Cook over medium heat until the chickpeas are warm and slightly darkened in color. Set aside and make cilantro yogurt sauce by mixing 6 ounces of plain soy yogurt with fresh cilantro, 1/4 tsp onion powder, 1/4 tsp garlic powder, 1/2 tsp dry parsley, 1 1/4 tsp lemon juice and salt to taste. Serve chickpeas at any temp, with cool cucumbers, lettuce and cilantro yogurt sauce in warmed whole wheat pitas.

Hambúrgueres de beringela grelhados

Serve 4-5

ingredientes:
• 1 beringela pequena, cortada em rodelas
• 1 tomate grande, cortado em fatias
• 1 cebola grande branca, cortada em rodelas
• 170 gramas de queijo mozzarela, cortado em fatias finas (uma fatia para cada hambúrguer)
• 4-5 fatias de pão italiano (uma fatia para cada hambúrguer) – creio que também poderá ser usada uma baguete (fatiada)
• 1-1/2 colheres de chá de manjericão fresco (picado)
• 4 colheres de sopa de maionese
• 1-1/2 colheres de chá de alho com chili (ou outro molho picante)
• 3-4 colheres de sopa de azeite
• 2 colheres de chá de sal, dividido
• 1 colher de chá de pimenta preta moída

instruções:
1. Depois de cortar a beringela, colocar as fatias em papel de cozinha e polvilhar com sal (irá ajudar a retirar os sucos da beringela). Deixar a repousar cerca de 30 minutos.
2. Colocar espetos de madeira, previamente, em água cerca 15-20 minutos, ou utilizar espetos de metal fino (os espetos irão manter a cebola junta enquanto grelha). Pincelar a cebola com um pouco de azeite.
3. Misturar a maionese e a pasta de alho com chili, misturar bem e colocar no frigorífico até estar pronta a usar.
4. Aquecer a grelha (ou frigideira)em lume médio e colocar as fatias de beringela, pincelar com um pouco de azeite, e polvilhar com pimenta preta moída e grelhar cerca de 15 minutos, ou até ficarem tenras, virando-as, quando necessário, para não queimarem.
5. Mais ou menos a meio, acrescentar a cebola na grelha. Virando-as, para que não queimem, mas de modo a que obtenham as marcas do grelhador.
6. Quando a beringela estiver grelhada, adicionar as fatias de queijo em cima das fatias, até derreterem.  Colocar as fatias de pão na grelha, e virar o pão – de modo a torrar ambos os lados.   Retirar o pão, a cebola e a beringela e colocar num tabuleiro (forno) e cobrir com folha de alumínio.*
7. Espalhar cerca de 1 colher de sopa da mistura de maionese sobre cada fatia de pão e cobrir com uma fatia de beringela.
8. Em seguida adicionar a fatia de tomate, e em seguida, as de cebola. Polvilhar com o manjericão e servir.

*Creio que para facilitar esta receita poder-se-ia, neste ponto, retirar-se o pão – sem colocar no tabuleiro -, barrar com maionese, e juntar a fatia de beringela – já com queijo derretido, ambos retirados do grelhador/frigideira – acrescentar em cima o tomate, a cebola e o manjericão (picado) e servir. 


Easy grilled eggplant burgers

Serves 4-5

Ingredients:
  • 1 small eggplant, sliced into 1/2-inch-thick rounds
  • 1 large tomato, cut into 1/4-inch-thick slices (one slice for each burger)
  • 1 large white onion, cut into 1/4-inch-thick rounds (one round for each burger)
  • 6 ounces mozzarella cheese, cut into thin slices (one slice for each burger)
  • 4-5 slices of crusty Italian-style bread (one slice for each burger)
  • 1-1/2 teaspoons fresh basil, ribbon cut
  • 4 tablespoons mayonnaise
  • 1-1/2 teaspoons garlic chili paste (or another type of hot sauce)
  • 3-4 tablespoons olive oil
  • 2 teaspoons salt, divided
  • 1 teaspoon ground black pepper
Directions:
  1. After slicing the eggplant, lay the slices on paper towels and sprinkle them with salt. This will help draw out the bitter juices from the eggplant. Allow them to sit for about 30 minutes.
  2. Consider using long toothpicks that have been soaked in water for 15-20 minutes, or thin metal skewers, to hold the onion rounds together for grilling. Brush the onions with a bit of the olive oil.
  3. Combine the mayonnaise and the garlic chili paste, mix well and refrigerate until ready to use.
  4. Heat your grill to medium heat. When the eggplant rounds are ready, brush them with a bit of the olive oil, sprinkle with ground black pepper and grill them for about 15 minutes, or until soft, turning them often so they don't burn.
  5. About halfway through grilling the eggplant, add the onions to the grill. Flip them so they do not burn, but so they still achieve grill marks.
  6. When the eggplant is cooked, add the slices of cheese to each, just so it melts, and place the slices of Italian bread on the grill. Flip the bread so it doesn't burn, but keep them on the grill just for a few minutes. Remove the eggplant, onions and bread and place on a baking sheet. Cover with foil.
  7. Spread about 1 tablespoon of the mayonnaise mixture over each slice of bread and top with an eggplant slice.
  8. Next add the tomato slice, then the onion rounds. Sprinkle with the basil and serve with a knife and fork.

Cogumelos recheados

Modo 1:
Corte os talos/hastes e retire a parte de dentro dos cogumelos (as lâminas). Pique os talos, lâminas e uma cebola e frite-os numa frigideira.  Adicione um pouco de queijo cottage, queijo feta ou tofu e alguns espinafres. Tempere com sal, pimenta e alho. Coloque a mistura dentro dos cogumelos (imagem acima) e polvilhe com um pouco de queijo ralado, e nozes picadas. Em seguida, grelhe-os por alguns minutos e sirva.

Modo 2:
Corte os talos e retire a parte de dentro dos cogumelos (as lâminas). Como acima, pique os talos, lâminas, e uma cebola e frite-os numa frigideira. Em seguida, adicione lentilhas cozidas. Adicione alguns tomates picados e, também, molho de tomate.  Tempere com sal, pimenta e manjericão. Coloque a mistura dentro dos cogumelos e grelhe um pouco.




Stuffed Button Mushrooms


Way number one:
Cut out the stems and get the gills out. Chop the stems, gills and an onion and fry them all on the frying pan. Add some cottage cheese, feta cheese or tofu and some spinach. Spice with salt, pepper and garlic. Spoon the mixture into the mushroom caps and sprinkle with a little bit of grated cheese (vegan or non) and chopped nuts. Then, grill them for several minutes and serve.

Way number two:
Cut out the stems and get the gills out. As above, chop the stems, gills and an onion and fry them all on a frying pan. Then, add to cooked lentils. Add some chopped tomatoes and tomato sauce as well. Spice with salt, pepper and basil. Spoon the mixture into the mushroom caps and grill.
